Sicilian Chicken Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups low-sodium chicken broth
  • 1/2 cup dry white wine (optional, but adds great depth of flavor)
  • 2 boneless, skinless chicken breasts or thighs (about 1 lb), cut into bite-sized pieces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 can (15 oz) cannellini beans or chickpeas, drained and rinsed (for added protein and texture)
  • 1 1/2 cups fresh spinach or kale, chopped (optional)
  • 1/2 cup small pasta (like ditalini, orzo, or elbows) (optional, for a heartier soup)
  • 1 tablespoon fresh lemon juice (for brightness)
  • Fresh parsley or basil, chopped (for garnish)
  • Parmesan cheese (optional, for garnish)

Instructions:

1. Sauté the Vegetables:

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.
  • Add the minced garlic and cook for another 1-2 minutes until fragrant.

2. Add the Liquids and Spices:

  • Stir in the diced tomatoes (with juices), chicken broth, and white wine (if using). Bring to a simmer.
  • Add the oregano, basil, red pepper flakes (if using), salt, and black pepper. Stir to combine.

3. Cook the Chicken:

  • Add the chicken pieces to the pot and stir them into the soup. Bring everything to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the chicken is fully cooked and tender.

4. Add Beans, Greens, and Pasta (Optional):

  • If you’re adding beans, stir in the cannellini beans or chickpeas and let them warm through (about 5 minutes).
  • If you’re using pasta, add it to the soup and cook according to the package instructions (typically around 8-10 minutes).
  • Stir in the spinach or kale and cook for another 2-3 minutes, until the greens are wilted and tender.

5. Finish the Soup:

  • Once everything is cooked, stir in the fresh lemon juice to brighten up the flavors.
  • Taste the soup and adjust the seasoning with additional salt and pepper if needed.

6. Serve:

  • Ladle the soup into bowls and garnish with freshly chopped parsley or basil and a sprinkle of Parmesan cheese, if desired.
  • Serve with crusty bread on the side for a complete meal.

Storage:

  • Store any leftover soup in an airtight container in the refrigerator for up to 4 days. The soup also freezes well for up to 3 months, though the pasta may become a bit softer upon reheating. To freeze, let the soup cool completely before transferring it to freezer-safe containers.
  • To reheat, simply warm the soup on the stovetop over medium heat or in the microwave until hot.

Tips & Variations:

  • Make it Spicy: If you like a little more heat, you can increase the amount of red pepper flakes or even add a sliced fresh chili to the soup.
  • Vegan Option: For a plant-based version, you can substitute the chicken with roasted vegetables (like zucchini, eggplant, or bell peppers) or tofu, and use vegetable broth instead of chicken broth.
  • More Vegetables: You can add other vegetables such as zucchini, bell peppers, or even potatoes to make the soup heartier and more nutritious.
  • Herb Variations: Fresh basil, thyme, or rosemary would also make excellent additions to this soup. You can experiment with different herbs depending on your preferences.

Serving Suggestions:

  • Bread: Serve this soup with some crusty bread, a slice of garlic bread, or a simple ciabatta for dipping.
  • Salad: Pair with a light green salad dressed in olive oil and lemon for a refreshing side.

This Sicilian Chicken Soup is a flavorful, hearty dish that’s full of Mediterranean goodness. The combination of tender chicken, beans, and fresh greens makes it a wholesome meal that’s perfect for a cozy evening. Enjoy!
