Simple Taco Bites are a fun, bite-sized snack or appetizer that capture all the flavors of tacos without the mess. They’re easy to make and perfect for parties, game day, or just a tasty snack!

Simple Taco Bites

Ingredients:

  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 tablespoon taco seasoning (or homemade seasoning)
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream (optional, for serving)
  • 1/4 cup salsa (optional, for serving)
  • 12 small flour tortillas (mini or cut regular tortillas into smaller circles)
  • 1 tablespoon olive oil
  • 1/4 cup chopped green onions (optional)
  • Fresh cilantro, chopped (optional)

Instructions:

1. Prepare the Taco Meat:
  • In a skillet, cook the ground beef over medium heat until browned, breaking it up with a spatula as it cooks.
  • Once the meat is fully cooked, drain any excess fat, then add the taco seasoning and water. Stir to combine and simmer for 5 minutes, or until the mixture thickens. Set aside to cool slightly.
2. Prepare the Tortilla Shells:
  • Preheat your oven to 375°F (190°C).
  • Brush both sides of the mini tortillas with olive oil.
  • Using a round cookie cutter or a small bowl, cut the tortillas into smaller rounds that will fit into a muffin tin (about 2-3 inches in diameter).
  • Place the tortilla rounds into the muffin tin, gently pressing them to form little “cups.”
  • Bake in the preheated oven for 8-10 minutes or until golden and crispy.
3. Assemble the Taco Bites:
  • Once the tortilla cups are baked and crispy, remove them from the oven.
  • Spoon a little of the cooked taco meat into each tortilla cup, then top with a sprinkle of shredded cheddar cheese.
  • Return the taco bites to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
4. Serve:
  • Once the taco bites are ready, remove them from the muffin tin and let them cool for a minute.
  • Serve with optional toppings like sour cream, salsa, chopped green onions, or fresh cilantro.

Tips:

  • Customization: You can customize the taco bites with your favorite taco toppings, such as guacamole, jalapeños, or diced tomatoes.
  • Meat alternatives: You can use ground chicken, pork, or even vegetarian crumbles as a substitute for beef.
  • Make it ahead: You can prepare the taco meat and tortilla cups in advance, then assemble and bake them when ready to serve.
