Sizzling Scallops with Zesty Lime Cilantro Sauce

📝 Ingredients

For the Scallops:

  • 1 lb fresh sea scallops, patted dry (key for searing!)

  • 2 tbsp olive oil

  • 1 tbsp butter (for richness)

  • Salt & pepper to taste

For the Zesty Lime Cilantro Sauce:

  • ¼ cup fresh lime juice (~2 limes)

  • 1 tbsp lime zest (for intense citrus aroma)

  • ¼ cup fresh cilantro, finely chopped

  • 2 garlic cloves, minced

  • Optional: 1 tsp honey or pinch of red pepper flakes for balance


🔥 Instructions

1. Prep the Scallops

  • Remove the small side muscle from scallops (if attached) and dry thoroughly (wet scallops won’t sear well!).

  • Season lightly with salt & pepper.

2. Sear to Perfection

  • Heat a skillet (stainless steel or cast iron) over medium-high heat. Add olive oil + butter.

  • Once hot (but not smoking), add scallops in a single layer, not touching.

  • Cook 2-3 mins per side until golden-brown crust forms and centers are just opaque. Don’t move them while searing!

  • Transfer to a plate and tent with foil to keep warm.

3. Make the Sauce

  • In the same pan (off heat), add lime juice, zest, garlic, and cilantro. Stir to scrape up any browned bits (flavor gold!).

  • Taste and adjust: add honey for sweetness or pepper flakes for heat if desired.

4. Serve

  • Drizzle sauce over scallops or serve on the side for dipping.
