Skillet Garlic Parmesan Chicken with Crispy Potatoes

Ingredients

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup breadcrumbs (Italian seasoned or plain)
    • 1 tsp garlic powder
    • 1/2 tsp paprika
    • Salt and pepper, to taste
    • 2 tbsp olive oil
    • 2 tbsp butter
    • 3-4 cloves garlic, minced
    • Fresh parsley, chopped (for garnish)
  • For the Crispy Potatoes:
    • 1 lb baby potatoes, halved
    • 2 tbsp olive oil
    • 1 tsp garlic powder
    • Salt and pepper, to taste
    • Fresh rosemary or thyme (optional)

Instructions

  1. Prepare the Potatoes:
    • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the halved baby potatoes, garlic powder, salt, and pepper. If using, add fresh herbs.
    • Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside. Remove from the skillet and set aside.
  2. Prepare the Chicken:
    • While the potatoes are cooking, preheat your oven to 400°F (200°C).
    • In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
    • Coat each chicken breast in the breadcrumb mixture, pressing to adhere.
  3. Cook the Chicken:
    • In the same skillet, add 2 tablespoons of butter over medium heat. Once melted, add the coated chicken breasts.
    • Cook for about 4-5 minutes per side until golden brown.
  4. Add Garlic:
    • Once both sides are golden, add the minced garlic to the skillet around the chicken. Cook for another minute until fragrant.
  5. Bake:
    • Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Combine and Serve:
    • Once the chicken is done, remove the skillet from the oven. Add the crispy potatoes back to the skillet, tossing gently to combine.
    • Garnish with chopped fresh parsley before serving.
