Slap Ya Momma Pound Cake

Ingredients:

For the Pound Cake:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 3/4 cups granulated sugar
  • 6 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional, for added flavor)
  • 1 cup buttermilk, at room temperature

Instructions:

1. Preheat the oven:

  • Preheat your oven to 325°F (165°C).
  • Grease and flour a 10-inch bundt pan or tube pan. You can also line it with parchment paper for easier removal.

2. Mix dry ingredients:

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Cream the butter and sugar:

  • In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter and sugar together on medium speed until light and fluffy. This should take about 4-5 minutes.

4. Add eggs:

  • Add the eggs one at a time, mixing well after each addition. Be sure each egg is fully incorporated before adding the next.

5. Add extracts:

  • Stir in the vanilla extract and almond extract (if using) until just combined.

6. Alternate adding dry ingredients and buttermilk:

  • With the mixer on low speed, add the dry flour mixture in three parts, alternating with the buttermilk in two parts. Start and end with the dry ingredients. Mix until just combined after each addition. Be careful not to overmix, as this can affect the texture of the cake.

7. Bake:

  • Pour the batter into the prepared bundt or tube pan. Smooth the top with a spatula.
  • Bake for 1 hour and 10 minutes to 1 hour and 20 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.

8. Cool the cake:

  • Let the cake cool in the pan for about 10-15 minutes before turning it out onto a wire rack to cool completely.

9. Serve:

  • Once cooled, slice and enjoy the rich, buttery goodness of this Slap Ya Momma Pound Cake. For extra indulgence, serve with whipped cream or fresh berries if desired.
