Slow Cooker Balsamic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs if preferred)
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/4 cup honey or brown sugar (adjust for sweetness)
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt and pepper on both sides.

2. Mix the Sauce:

  • In a small bowl, whisk together the balsamic vinegar, olive oil, honey (or brown sugar), minced garlic, dried oregano, and dried basil until well combined.

3. Cook in the Slow Cooker:

  • Place the seasoned chicken breasts in the slow cooker.
  • Pour the balsamic mixture over the chicken, making sure the chicken is well-coated in the sauce.

4. Slow Cook:

  • Cover and cook on low for 4-6 hours or high for 2-3 hours. The chicken should be tender and cooked through (internal temperature of 165°F or 74°C).

5. Finish and Serve:

  • Once the chicken is cooked, remove it from the slow cooker and set it aside. If you want to thicken the sauce, you can pour it into a saucepan and simmer on medium-high for about 5 minutes until it reduces and thickens slightly.
  • Return the chicken to the slow cooker to coat in the thickened sauce, or spoon the sauce over the chicken when serving.

  • Garnish with fresh parsley for a burst of color and fresh flavor, then serve over rice, pasta, or with roasted vegetables.
