Slow Cooker Coca-Cola Ribs 🍖

Ingredients:

  • 1 rack pork baby back ribs
  • 12 oz Coca-Cola
  • 1 (18 oz) jar barbecue sauce (your favorite variety)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the ribs:

    • Remove the silver skin (the thin membrane) from the back of the ribs. This helps the flavors penetrate better and makes the ribs more tender.
    • Cut the rack of ribs into smaller sections (about 2-3 ribs per section) so that they fit better in the slow cooker.
  2. Season the ribs:

    • Season both sides of the ribs generously with kosher salt and freshly ground black pepper. This will enhance the flavor of the meat.
  3. Layer the ribs in the slow cooker:

    • Place the ribs in the slow cooker, stacking them if necessary, but make sure they’re mostly submerged in the liquid.
  4. Add the Coca-Cola:

    • Pour the Coca-Cola over the ribs. The carbonation in the soda helps tenderize the meat while also adding a subtle sweetness.
  5. Add the barbecue sauce:

    • Pour the barbecue sauce over the ribs, making sure the ribs are well coated. You can use your favorite BBQ sauce—whether it’s tangy, sweet, or spicy.
  6. Cook the ribs:

    • Cover the slow cooker with its lid. Cook on low for 6 to 8 hours, or until the ribs are tender and the meat pulls away easily from the bones.
    • Alternatively, you can cook on high for 4 to 5 hours, but low and slow results in the most tender ribs.
  7. Serve:

    • Once done, carefully remove the ribs from the slow cooker and serve with additional barbecue sauce on the side, if desired.

Tips:

  • Broil for a crispy finish: If you like your ribs a little crispy on the outside, transfer the cooked ribs to a baking sheet and broil them in the oven for 3-5 minutes with a little extra barbecue sauce for caramelization.
  • Adjust sweetness: If you find the Coca-Cola makes the ribs too sweet for your taste, you can use a diet or sugar-free version of Coca-Cola or reduce the amount of barbecue sauce.
