Slow Cooker Hawaiian Ribs Recipe

Ingredients:

  • 2 pounds pork ribs (baby back or spare ribs)
  • 1 cup diced pineapple (fresh or canned, drained if using canned)
  • 3 tablespoons brown sugar
  • 1/2 cup barbecue sauce
  • 1/4 cup soy sauce
  • 2 garlic cloves (minced)
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon cornstarch (optional, for thickening sauce)
  • Optional garnish: chopped green onions or sesame seeds

Instructions:

  1. Prepare the Ribs:
    • If using spare ribs, remove the membrane from the back of the ribs for a more tender result. Cut the ribs into smaller sections (about 3-4 ribs per section) to fit in the slow cooker.
  2. Make the Sauce:
    • In a medium bowl, combine the diced pineapple, brown sugar, barbecue sauce, soy sauce, minced garlic, and grated ginger. Mix well.
  3. Cook the Ribs:
    • Place the ribs in the slow cooker and pour the sauce over them, making sure they are evenly coated.
    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the ribs are tender and easily pull apart with a fork.
  4. Optional: Thicken the Sauce:
    • If you prefer a thicker sauce, remove the ribs from the slow cooker and set aside. Pour the cooking liquid into a small saucepan.
    • In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the cooking liquid and bring to a simmer over medium heat. Cook for 2-3 minutes, or until the sauce thickens.
  5. Serve:
    • Brush the ribs with the thickened sauce (if using) or serve the sauce on the side.
    • Garnish with chopped green onions or sesame seeds if desired. Serve with rice, coleslaw, or a fresh salad.

Tips:

  • Broil for Crispiness: For caramelized, crispy edges, place the cooked ribs on a baking sheet, brush with sauce, and broil for 2-3 minutes.
  • Pineapple Substitute: If you don’t have fresh or canned pineapple, use pineapple juice or a splash of orange juice for a similar flavor.
  • Make Ahead: You can prepare the sauce and marinate the ribs overnight in the fridge for extra flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
