Slow Cooker Pot Roast with Gravy

Ingredients:

  • 3-4 lbs beef chuck roast
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 onion, chopped
  • 3-4 carrots, peeled and cut into chunks
  • 3-4 potatoes, peeled and cut into chunks
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 tablespoons cornstarch (optional, for thickening)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Sear the Roast (optional):
    • In a large skillet, heat the olive oil over medium-high heat. Season the roast with salt and pepper. Sear the roast on all sides until browned (about 3-4 minutes per side). This step adds flavor but can be skipped if you’re short on time.
  2. Prepare the Slow Cooker:
    • Place the chopped onion, carrots, and potatoes at the bottom of the slow cooker.
  3. Add the Roast:
    • Place the seared (or raw) roast on top of the vegetables.
  4. Make the Gravy:
    • In a bowl, mix together the beef broth, Worcestershire sauce, minced garlic, thyme, rosemary, and bay leaf. Pour this mixture over the roast and vegetables.
  5. Cook:
    • Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and easily shredded with a fork.
  6. Thicken the Gravy (optional):
    • If you prefer a thicker gravy, remove the roast and vegetables from the slow cooker. In a small bowl, mix the cornstarch with a couple of tablespoons of water to create a slurry. Stir this into the remaining liquid in the slow cooker and cook on high for about 15 minutes until thickened.
  7. Serve:
    • Slice or shred the roast and serve it with the vegetables and gravy. Garnish with fresh parsley if desired.

  • Leftovers: Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Serving Suggestions: This pot roast pairs well with crusty bread or over mashed potatoes.
