Slow Cooker Ravioli Lasagna

Ingredients:

  • 1 package (25 oz) frozen cheese ravioli (or fresh, if preferred)
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Prepare the Cheese Mixture:
    • In a bowl, combine ricotta cheese, egg, Italian seasoning, salt, and pepper. Mix well.
  2. Layer the Ingredients:
    • In the bottom of the slow cooker, spread a thin layer of marinara sauce.
    • Add a layer of frozen ravioli on top of the sauce.
    • Spoon half of the ricotta mixture over the ravioli, followed by a layer of mozzarella cheese.
    • Repeat the layers: marinara sauce, ravioli, ricotta mixture, and mozzarella cheese.
    • Finish with a final layer of marinara sauce and top with the remaining mozzarella and Parmesan cheese.
  3. Cook:
    • Cover the slow cooker and cook on low for 4-5 hours, or on high for 2-3 hours, until the ravioli is cooked through and the cheese is melted and bubbly.
  4. Serve:
    • Once done, let it sit for about 10 minutes before serving. Garnish with fresh basil or parsley if desired.

Tips:

  • Variations: Feel free to add sautéed vegetables (like spinach, mushrooms, or zucchini) between the layers for added nutrition.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
