Slow-cooker scalloped potatoes are a delicious and easy way to prepare this classic comfort dish. Here’s a simple recipe:

Ingredients:

  • 4-5 medium russet potatoes, peeled and thinly sliced
  • 1 medium onion, finely chopped (optional)
  • 2 cups shredded cheddar cheese (or your favorite cheese)
  • 1 ½ cups heavy cream
  • 1 ½ cups milk
  • 3 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for flavor)
  • 1 tablespoon fresh parsley (optional, for garnish)

Instructions:

1. Prepare the potatoes:

  • Peel and thinly slice the potatoes into about 1/8-inch thick rounds. You can use a mandoline slicer for even slices, but a sharp knife works just fine too.

2. Prepare the slow cooker:

  • Grease the inside of the slow cooker with butter or cooking spray to prevent sticking.

3. Layer the potatoes:

  • Layer half of the sliced potatoes in the bottom of the slow cooker.
  • Add half of the chopped onions (if using), minced garlic, and 1 cup of shredded cheese on top of the first layer of potatoes.
  • Repeat the process with the remaining potatoes, onions, garlic, and cheese.

4. Make the creamy sauce:

  • In a mixing bowl, whisk together the heavy cream, milk, melted butter, salt, pepper, and paprika (if using).
  • Pour the cream mixture evenly over the layered potatoes in the slow cooker.

5. Cook the potatoes:

  • Cover and cook on low for 4 to 6 hours, or until the potatoes are tender and the cheese is melted and bubbly. You can check for doneness by inserting a fork into the potatoes—they should be easily pierced.

6. Add the final touch:

  • About 30 minutes before serving, sprinkle the remaining cheese on top of the potatoes for an extra cheesy finish. Let it melt and become golden.

7. Serve:

  • Once the scalloped potatoes are fully cooked, garnish with chopped fresh parsley (optional), and serve hot!

Tips:

  • Cheese options: You can mix different cheeses like Monterey Jack, Gruyère, or Parmesan for more flavor.
  • Make it creamy: For extra creaminess, you can add more heavy cream or sour cream.
  • Add-ins: Try adding cooked bacon, ham, or even some herbs like thyme or rosemary for a variation.
