Slow Cooker Chicken and Dumplings

Ingredients:

For the Chicken and Stew:

  • 1.5 to 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas (optional)

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter

Instructions:

  1. Prepare the Chicken and Stew:
    • Place the chicken breasts or thighs in the slow cooker. Add the carrots, celery, onion, chicken broth, garlic powder, onion powder, thyme, salt, and pepper. Stir to combine.
  2. Cook the Chicken:
    • Cover and cook on low for about 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  3. Shred the Chicken:
    • Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker. If using, stir in the frozen peas at this point.
  4. Make the Dumplings:
    • In a bowl, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter until just combined (do not overmix).
  5. Add Dumplings to the Slow Cooker:
    • Drop spoonfuls of the dumpling batter over the chicken and stew mixture in the slow cooker. Cover and cook on high for an additional 30-45 minutes, or until the dumplings are cooked through and fluffy.
  6. Serve:
    • Once the dumplings are done, serve hot and enjoy this comforting meal!

Tips:

  • Additions: Feel free to add other vegetables like corn or green beans.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
