Smoked BBQ Chicken Recipe

Ingredients:

  • 4 chicken quarters (legs and thighs) or 1 whole chicken, spatchcocked
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon brown sugar
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup BBQ sauce (store-bought or homemade)
  • Wood chips for smoking (hickory, apple, or cherry wood work well)

Instructions:

  1. Prepare the Chicken:
    • Rinse the chicken under cold water and pat it dry with paper towels. If using a whole chicken, spatchcock it by removing the backbone and flattening it.
  2. Make the Rub:
    • In a bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, brown sugar, salt, and black pepper.
  3. Season the Chicken:
    • Rub the olive oil over the chicken, then generously apply the spice rub all over, making sure to get under the skin where possible.
  4. Preheat the Smoker:
    • Preheat your smoker to 225°F (107°C). Add your chosen wood chips according to your smoker’s instructions.
  5. Smoke the Chicken:
    • Place the chicken in the smoker, skin side up. Smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). If using a whole chicken, it may take a bit longer.
  6. Apply BBQ Sauce:
    • During the last 30 minutes of smoking, brush the chicken with BBQ sauce. Repeat this step a couple of times for a nice glaze.
  7. Rest and Serve:
    • Once done, remove the chicken from the smoker and let it rest for about 10-15 minutes before serving. This helps keep it juicy.
