Here’s a delicious recipe for smoked BBQ chicken that’s juicy, flavorful, and perfect for your next cookout!
Smoked BBQ Chicken Recipe
Ingredients:
- 4 chicken quarters (legs and thighs) or 1 whole chicken, spatchcocked
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper (optional, for heat)
- 1 tablespoon brown sugar
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 cup BBQ sauce (store-bought or homemade)
- Wood chips for smoking (hickory, apple, or cherry wood work well)
Instructions:
- Prepare the Chicken:
- Rinse the chicken under cold water and pat it dry with paper towels. If using a whole chicken, spatchcock it by removing the backbone and flattening it.
- Make the Rub:
- In a bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, brown sugar, salt, and black pepper.
- Season the Chicken:
- Rub the olive oil over the chicken, then generously apply the spice rub all over, making sure to get under the skin where possible.
- Preheat the Smoker:
- Preheat your smoker to 225°F (107°C). Add your chosen wood chips according to your smoker’s instructions.
- Smoke the Chicken:
- Place the chicken in the smoker, skin side up. Smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). If using a whole chicken, it may take a bit longer.
- Apply BBQ Sauce:
- During the last 30 minutes of smoking, brush the chicken with BBQ sauce. Repeat this step a couple of times for a nice glaze.
- Rest and Serve:
- Once done, remove the chicken from the smoker and let it rest for about 10-15 minutes before serving. This helps keep it juicy.
Enjoy!
