Smoked Sausage and Potato Bake

This hearty, one-pan Smoked Sausage and Potato Bake is packed with savory flavors, tender potatoes, and juicy smoked sausage—all roasted to perfection with a golden, crispy finish. It’s an easy, satisfying meal the whole family will love!

Ingredients:

  • 1 lb smoked sausage (kielbasa, andouille, or your favorite variety), sliced into ½-inch rounds
  • 1.5 lbs baby potatoes (or Yukon gold potatoes), halved or quartered
  • 1 bell pepper (any color), diced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup shredded cheddar cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Preheat & Prep

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss potatoes, bell pepper, onion, and garlic with olive oil, smoked paprika, thyme, garlic powder, onion powder, salt, and pepper.

2. Layer the Ingredients

  • Spread the potato mixture in a large baking dish (9×13-inch or similar).
  • Arrange sliced smoked sausage on top.

3. Bake

  • Cover with foil and bake for 30 minutes.
  • Uncover, stir, and bake for another 20-25 minutes until potatoes are tender and slightly crispy.
  • (Optional) Sprinkle with cheddar cheese and broil for 2-3 minutes until melted and bubbly.

4. Garnish & Serve

  • Top with fresh parsley and serve hot!

✔ Extra crispy? Toss everything in cornstarch (1 tbsp) before baking.
