Smoky Jalapeño Popper Soup with Grilled Chicken

This Smoky Jalapeño Popper Soup with grilled chicken is a creamy, comforting dish that combines the smoky heat of jalapeños, savory grilled chicken, and the creamy goodness of cream cheese. It’s perfect for a cozy night in!

Ingredients:

  • 1 lb grilled chicken breast, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4-5 fresh jalapeños, chopped (seeds removed for less heat, if preferred)
  • 1 cup cream cheese, softened
  • 4 cups chicken broth
  • 1 ½ cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon lime juice (optional, for a little acidity)
  • Chopped cilantro, for garnish (optional)
  • Sour cream, for topping (optional)

Instructions:

1. Sauté the Aromatics:

  • In a large pot, heat 1 tablespoon olive oil over medium heat.
  • Add the chopped onion and sauté until softened, about 5 minutes.
  • Add the minced garlic and chopped jalapeños, and cook for another 1-2 minutes until fragrant.

2. Add the Chicken and Spices:

  • Stir in the diced grilled chicken and season with smoked paprika, ground cumin, salt, and pepper. Cook for another 3-4 minutes to allow the flavors to meld.

3. Create the Soup Base:

  • Add the chicken broth to the pot and bring to a simmer. Let it cook for about 10 minutes.

4. Stir in the Cream Cheese:

  • Lower the heat and add the cream cheese to the soup. Stir until the cream cheese is fully incorporated and the soup becomes creamy.

5. Add the Cheese and Cream:

  • Stir in the shredded cheddar cheese and heavy cream. Continue stirring until the cheese has melted and the soup is smooth and creamy.
  • Taste and adjust seasoning with more salt, pepper, or smoked paprika, if needed.

6. Finish the Soup:

  • Add lime juice for a pop of freshness (optional).
  • Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together.

7. Serve:

  • Ladle the soup into bowls and garnish with chopped cilantro and a dollop of sour cream (if desired).
  • Serve with warm bread or tortilla chips on the side.

Tips for Success:

  • For Extra Smokiness: You can add a bit of smoked gouda cheese or chipotle peppers in adobo sauce for an even smokier flavor.
  • Adjust the Heat: If you prefer a milder soup, remove the seeds from the jalapeños or reduce the amount of jalapeños used.
  • Make it Vegetarian: You can omit the grilled chicken for a delicious vegetarian version of this soup.

This Smoky Jalapeño Popper Soup with Grilled Chicken is a flavor-packed, creamy bowl of goodness that’s perfect for a hearty meal! The smoky jalapeños and grilled chicken make this soup uniquely delicious and satisfying. 😋🔥🍲
