Smothered Okra with Shrimp

Ingredients

  • 1 lb fresh or frozen okra, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 2-3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup vegetable or chicken broth
  • 2 tbsp olive oil or butter
  • 1 tsp Cajun seasoning (or to taste)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the Vegetables:
    • In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and bell pepper. Sauté for about 5-7 minutes until softened.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  2. Add the Okra:
    • Stir in the sliced okra and cook for about 5 minutes, allowing it to soften and reduce in size.
  3. Add Tomatoes and Broth:
    • Pour in the diced tomatoes with their juice and the broth. Stir well to combine. Season with Cajun seasoning, salt, and pepper.
    • Bring the mixture to a simmer and let it cook for about 10-15 minutes, stirring occasionally.
  4. Add the Shrimp:
    • Add the shrimp to the skillet and cook for another 5-7 minutes, or until the shrimp are pink and cooked through.
  5. Serve:
    • Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
