Smothered Oxtails Recipe

Ingredients:

  • 3-4 pounds oxtails, trimmed
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 bell pepper, chopped (any color)
  • 2 tablespoons tomato paste
  • 4 cups beef broth (or enough to cover the oxtails)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season and Sear the Oxtails:
    • Season the oxtails with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the oxtails and sear them on all sides until browned (about 4-5 minutes per side). Remove the oxtails and set aside.
  2. Sauté Vegetables:
    • In the same pot, add the chopped onion, garlic, carrots, celery, and bell pepper. Sauté for about 5-7 minutes, until the vegetables are softened.
  3. Add Tomato Paste and Seasonings:
    • Stir in the tomato paste and cook for an additional 2 minutes. Then add the beef broth, thyme, rosemary, bay leaf, and Worcestershire sauce. Stir to combine.
  4. Return Oxtails to the Pot:
    • Place the seared oxtails back into the pot, ensuring they are submerged in the liquid. Bring to a simmer.
  5. Simmer:
    • Cover the pot and reduce the heat to low. Let it simmer for about 2.5 to 3 hours, or until the oxtails are tender and falling off the bone. Stir occasionally, adding more broth or water if needed.
  6. Thicken the Gravy (Optional):
    • If you prefer a thicker gravy, mix the flour with a little cold water to create a slurry. Stir this into the pot during the last 15-20 minutes of cooking and let it simmer until thickened.
  7. Serve:
    • Once done, remove the bay leaf and taste for seasoning. Serve the smothered oxtails over rice, mashed potatoes, or with crusty bread. Garnish with fresh parsley.
