Smothered Pork Chops with Potatoes in Gravy

Ingredients:

For the Pork Chops & Potatoes:

  • 4 bone-in pork chops (½ to ¾-inch thick)

  • 1 tsp salt (divided)

  • 1 tsp black pepper (divided)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 2 tbsp olive oil (or butter)

  • 4 medium Yukon Gold potatoes, sliced into ½-inch rounds

  • 1 large onion, thinly sliced

For the Gravy:

  • 3 tbsp all-purpose flour

  • 2 cups chicken broth (or beef broth for richer flavor)

  • ½ cup heavy cream (or whole milk for lighter gravy)

  • 1 tsp Worcestershire sauce

  • 1 tsp dried thyme (or 1 tbsp fresh thyme)

  • 1 bay leaf (optional)

Instructions:

  1. Season & Sear Pork Chops:

    • Pat pork chops dry and season with ½ tsp salt, ½ tsp pepper, garlic powder, and smoked paprika.

    • Heat olive oil in a large skillet or Dutch oven over medium-high heat.

    • Sear chops for 3–4 minutes per side until golden brown. Remove and set aside.

  2. Cook Onions & Potatoes:

    • In the same skillet, add sliced onions and cook for 3–4 minutes until softened.

    • Add potatoes, remaining ½ tsp salt & pepper, and cook for 5 minutes, stirring occasionally.

  3. Make the Gravy:

    • Sprinkle flour over the onions and potatoes, stirring for 1 minute to cook off the raw flour taste.

    • Slowly pour in broth, stirring constantly to avoid lumps.

    • Add heavy cream, Worcestershire sauce, thyme, and bay leaf. Bring to a simmer.

  4. Braise the Pork Chops:

    • Return pork chops to the skillet, nestling them into the gravy and potatoes.

    • Cover and simmer on low heat for 25–30 minutes, or until pork is tender (145°F internal temp) and potatoes are soft.

  5. Serve:

    • Discard the bay leaf. Adjust seasoning if needed.

    • Garnish with fresh parsley and serve with extra gravy spooned over the top.
