Snickerdoodle Cheesecake Brownies are a delicious fusion of rich cheesecake, cinnamon-sugar, and chocolatey brownies. Here’s a simple recipe to make them at home:

Ingredients:

For the Brownie Layer:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) all-purpose flour
  • 1/4 cup (30g) cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

For the Cheesecake Layer:

  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Snickerdoodle Swirl:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. Prepare the Brownie Layer:

    • In a large mixing bowl, whisk together the melted butter and sugar until smooth.
    • Add in the eggs and vanilla extract, whisking until fully combined.
    • In a separate bowl, mix together the flour, cocoa powder, salt, and baking powder.
    • Gradually add the dry ingredients to the wet ingredients, stirring until combined. The batter should be thick.
  3. Prepare the Cheesecake Layer:

    • In a separate bowl, beat the softened cream cheese and sugar until smooth and creamy.
    • Add the egg and vanilla extract and beat until well combined.
  4. Assemble the Brownies:

    • Pour the brownie batter into the prepared baking dish and spread it evenly.
    • Drop spoonfuls of the cheesecake mixture over the brownie batter.
    • Using a knife or skewer, swirl the cheesecake into the brownie batter to create a marbled effect.
  5. Make the Snickerdoodle Swirl:

    • In a small bowl, mix the cinnamon and sugar together.
    • Sprinkle the cinnamon-sugar mixture evenly over the top of the brownie and cheesecake layers.
  6. Bake:

    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out mostly clean (a few crumbs are okay).
    • Allow the brownies to cool completely in the pan before cutting into squares.
  7. Serve and Enjoy:

    • Once cooled, slice into squares and enjoy the decadent Snickerdoodle Cheesecake Brownies!
