Snow Cheesecake Recipe

Ingredients

  • For the Crust:
    • 1 ½ cups graham cracker crumbs
    • 1/2 cup unsalted butter, melted
    • 1/4 cup sugar
  • For the Cheesecake Filling:
    • 16 oz (2 packages) cream cheese, softened
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 cup heavy cream
    • 1/2 cup sour cream (optional for tanginess)
    • 1/4 cup lemon juice (optional for flavor)
  • For the Topping:
    • Whipped cream (for serving)
    • Shredded coconut (to resemble snow)
    • Fresh berries or fruit (optional for garnish)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan. Bake for about 8-10 minutes, then remove and let it cool.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Add the powdered sugar and vanilla extract, mixing until well combined.
    • In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
    • If using, fold in the sour cream and lemon juice for added flavor and tang.
  3. Assemble the Cheesecake:
    • Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
    • Refrigerate for at least 4 hours, or until set (overnight is best).
  4. Serve:
    • Once set, carefully remove the cheesecake from the springform pan.
    • Top with whipped cream, shredded coconut, and fresh berries if desired.
