Classic Coconut Snowballs Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for rolling
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup shredded coconut

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix well.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this to the butter mixture and mix until a dough forms.
  4. Incorporate Coconut: Gently fold in the shredded coconut until evenly distributed.
  5. Shape Snowballs: Roll the dough into 1-inch balls and place them on the prepared baking sheet, spaced about 1 inch apart.
  6. Bake: Bake in the preheated oven for 12–15 minutes, or until the bottoms are lightly golden. The tops should remain pale.
  7. Coat in Powdered Sugar: While the cookies are still warm, roll them in powdered sugar to coat. Let them cool, then roll them a second time for a thicker “snowy” look.
  8. Serve: Enjoy with a cup of hot chocolate or tea!
