Soft and Chewy Easter Cookies Recipe 🌷💖🍪

These Soft and Chewy Easter Cookies are a delightful treat for the spring season! With a soft texture, sweet flavor, and colorful candy, they’re perfect for Easter celebrations, family gatherings, or just a fun bake with loved ones.

Ingredients:

  • 1 ½ cups plus 1 tablespoon all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional, for a hint of flavor)
  • 1 cup pastel M&M’s or candy-coated chocolate eggs (for a festive touch)
  • 1 cup white chocolate chips or semi-sweet chocolate chips
  • Sprinkles (optional, for extra color and fun)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mats.

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Cream Butter and Sugars:

  • In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). This step is important for the soft, chewy texture.

4. Add Egg and Extracts:

  • Add the egg, vanilla extract, and almond extract (if using) to the butter and sugar mixture. Beat until smooth and combined.

5. Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

6. Stir in the Add-ins:

  • Gently fold in the pastel M&M’s (or candy-coated chocolate eggs) and white chocolate chips (or semi-sweet chocolate chips). You can also add some sprinkles for extra color and fun!

7. Scoop the Cookie Dough:

  • Using a cookie scoop or tablespoon, scoop out the dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

8. Bake the Cookies:

  • Bake for 10-12 minutes, or until the edges are golden but the centers are still soft. Keep an eye on them to avoid overbaking!

9. Cool and Serve:

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips for Success:

  • Chill the dough: If you want thicker cookies, chill the dough in the refrigerator for 30 minutes to an hour before baking.
  • Add different mix-ins: You can customize these cookies by using chopped nuts, dried fruit, or other types of candy.
  • Storage: These cookies stay soft and chewy for up to 1 week when stored in an airtight container. You can also freeze them for longer storage.

These Soft and Chewy Easter Cookies are a perfect treat to enjoy with family and friends, and they’re festive enough for any Easter celebration. Enjoy the burst of color and flavor in every bite! 🌷💖🍪
