Soft and Chewy Pistachio Pudding Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 (3.4 oz) package instant pistachio pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips (or semi-sweet if preferred)
  • 1/2 cup shelled pistachios, chopped

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. Cream the butter and sugars:

  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer until the mixture is light and fluffy (about 2-3 minutes).

3. Add the pudding mix and eggs:

  • Add the pistachio pudding mix, eggs, and vanilla extract to the butter mixture. Mix until everything is well combined.

4. Combine dry ingredients:

  • In a separate bowl, whisk together the flour, baking soda, and salt.

5. Mix the wet and dry ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. Add chocolate chips and pistachios:

  • Gently fold in the white chocolate chips and chopped pistachios.

7. Shape the cookies:

  • Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8. Bake the cookies:

  • Bake the cookies for 9-11 minutes, or until the edges are lightly golden. The center of the cookies should still look slightly soft.

9. Cool the cookies:

  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
