Soft Yogurt Bread Rolls Recipe

These Soft Yogurt Bread Rolls are pillowy, tender, and slightly tangy from the yogurt, making them perfect for sandwiches, sliders, or simply as dinner rolls. They’re easy to make and require minimal ingredients.


Ingredients

  • 3 1/2 cups all-purpose flour (plus extra for dusting)
  • 2 1/4 tsp instant yeast (1 packet)
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 1 cup plain yogurt (Greek or regular, room temperature)
  • 1/2 cup warm milk (100–110°F)
  • 1 large egg
  • 3 tbsp unsalted butter, softened (plus extra for brushing)

Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, whisk together the flour, yeast, sugar, and salt.
    • In a separate bowl, combine the yogurt, warm milk, egg, and softened butter. Mix until smooth.
    • Gradually add the wet ingredients to the dry ingredients. Stir until a shaggy dough forms.
  2. Knead the Dough:
    • Transfer the dough to a lightly floured surface and knead for 8–10 minutes, or until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment and knead on medium speed for 5–7 minutes.
  3. First Rise:
    • Place the dough in a greased bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for 1–1.5 hours, or until it doubles in size.
  4. Shape the Rolls:
    • Punch down the risen dough and divide it into 12 equal portions. Shape each portion into a smooth ball by rolling it gently between your hands.
    • Arrange the dough balls on a greased or parchment-lined baking sheet, spacing them about 1 inch apart.
  5. Second Rise:
    • Cover the rolls with a damp towel and let them rise again for 30–45 minutes, or until puffy.
  6. Bake:
    • Preheat your oven to 375°F (190°C).
    • Brush the tops of the rolls with melted butter or an egg wash (1 beaten egg mixed with 1 tbsp water) for a shiny finish.
    • Bake for 15–20 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.
  7. Cool and Serve:
    • Remove the rolls from the oven and brush with more melted butter, if desired. Let them cool slightly before serving.

Tips for Success

  • Texture: For even softer rolls, substitute half of the all-purpose flour with bread flour.
  • Flavor Variations: Add 1/4 cup of grated cheese or 1 tbsp of fresh herbs (like rosemary or thyme) to the dough for a savory twist.
  • Storage: Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Reheat in the oven for a freshly baked taste.
