Sourdough Sandwich Bread Recipe

Ingredients:

  • 1 cup active sourdough starter (fed and bubbly)
  • 1 cup warm water (about 110°F/43°C)
  • 2 tablespoons honey or sugar
  • 4 cups all-purpose flour (or bread flour)
  • 1 1/2 teaspoons salt
  • 2 tablespoons unsalted butter, softened

Instructions:

1. Combine Ingredients:

  • In a large mixing bowl, combine the active sourdough starter, warm water, and honey (or sugar). Mix until well combined.

2. Add Flour and Salt:

  • Gradually add the flour and salt to the mixture, stirring until a shaggy dough forms.

3. Knead the Dough:

  • Transfer the dough to a floured surface and knead for about 8-10 minutes, or until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook for about 5-7 minutes.

4. Incorporate Butter:

  • Knead in the softened butter until fully incorporated. The dough should be soft and slightly tacky but not overly sticky.

5. First Rise:

  • Place the dough in a greased bowl, cover it with a clean cloth or plastic wrap, and let it rise at room temperature for about 4-6 hours, or until doubled in size. You can also refrigerate it overnight for a slower fermentation.

6. Shape the Dough:

  • Once the dough has risen, gently punch it down to release the air. Turn it out onto a floured surface and shape it into a rectangle. Fold the sides in and roll it tightly into a log shape.

7. Second Rise:

  • Place the shaped dough seam-side down in a greased 9×5-inch loaf pan. Cover it with a cloth and let it rise again until it puffs up and reaches the top of the pan, about 1-2 hours.

8. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

9. Bake the Bread:

  • Once the dough has risen, bake it in the preheated oven for 30-35 minutes, or until golden brown and sounds hollow when tapped on the bottom. The internal temperature should reach around 190°F (88°C).

10. Cool the Bread:

  • Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, turn it out onto a wire rack to cool completely before slicing.
