Ingredients:

For the Soup Base:

  • 2 tablespoons vegetable oil (or coconut oil for extra coconut flavor)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated or minced
  • 2 tablespoons red curry paste (adjust for more spice)
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar (optional for sweetness)
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 cups chicken or vegetable broth
  • 1 teaspoon lime juice
  • 1 teaspoon turmeric (optional for extra flavor)
  • 1 teaspoon chili paste, sriracha, or red pepper flakes (adjust for desired spice level)

For the Ramen:

  • 2 servings of ramen noodles (fresh or instant)

Toppings (Optional):

  • Soft-boiled eggs
  • Fresh cilantro or Thai basil
  • Lime wedges
  • Sliced scallions
  • Sliced chili peppers
  • Sesame seeds
  • Sautéed vegetables (like spinach, mushrooms, or bell peppers)
  • Cooked chicken, shrimp, or tofu for added protein

Instructions:

1. Prepare the Broth:

  • In a large pot, heat the vegetable oil over medium heat.
  • Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
  • Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
  • Add the red curry paste and stir to combine, letting it cook for 1-2 minutes to intensify the flavor.
  • Pour in the coconut milk and chicken/vegetable broth. Stir well to combine.
  • Add soy sauce, brown sugar (if using), lime juice, turmeric (if using), and chili paste or red pepper flakes. Bring the soup to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together.

2. Cook the Ramen Noodles:

  • While the broth is simmering, cook the ramen noodles according to the package instructions (usually about 3-5 minutes).
  • Drain the noodles and set them aside.

3. Assemble the Soup:

  • Once the broth has simmered and the flavors have come together, taste it and adjust seasoning as needed. If you want it spicier, add more chili paste or red pepper flakes.
  • Divide the cooked ramen noodles into bowls.
  • Pour the hot coconut curry broth over the noodles, ensuring the noodles are covered.

4. Top and Serve:

  • Add your desired toppings like a soft-boiled egg, cilantro, lime wedges, scallions, sliced chili peppers, or sautéed vegetables.
