Spicy Shrimp Cucumber Sushi Boats 🥒🍤

A low-carb, refreshing twist on sushi! Crisp cucumber “boats” filled with sushi rice, spicy garlic shrimp, creamy avocado mash, and drizzled with spicy mayo. Perfect for a light lunch or appetizer!


🍽️ Spicy Shrimp Cucumber Sushi Boats Recipe

Prep Time: 20 mins | Cook Time: 5 mins | Serves: 4 (6 boats per person)

Ingredients:

For the Cucumber Boats:

  • 2 large English cucumbers (or 4 Persian cucumbers)

  • 1 cup cooked sushi rice (seasoned with 1 tbsp rice vinegar + ½ tsp sugar + ¼ tsp salt)

  • 1 tbsp toasted sesame seeds

For the Spicy Shrimp:

  • 24 medium shrimp, peeled & deveined (thawed if frozen)

  • 2 tbsp olive oil

  • ¾ tsp each: garlic powder, onion powder, paprika, chili powder, dried oregano

  • Salt to taste

For the Avocado Mash:

  • 3 ripe avocados, roughly mashed

  • 1 lime, juiced

  • Salt to taste

For the Spicy Mayo:

  • ¼ cup Kewpie mayo (or regular mayo)

  • 2 tsp Sriracha (adjust to heat preference)

  • 1 tsp honey (optional, balances heat)

Optional Garnishes:

  • Sliced green onions

  • Extra Sriracha drizzle

  • Pickled ginger


🔥 Instructions:

  1. Prep Cucumber Boats:

    • Slice cucumbers lengthwise and scoop out seeds with a spoon, leaving a ½-inch thick “boat.” Pat dry.

  2. Cook Shrimp:

    • Toss shrimp with olive oil, spices, and salt.

    • Heat a skillet over medium-high, cook shrimp 1–2 mins per side until pink. Set aside.

  3. Make Avocado Mash:

    • Mash avocados with lime juice and salt (keep it slightly chunky).

  4. Make Spicy Mayo:

    • Whisk mayo, Sriracha, and honey in a small bowl.

  5. Assemble Boats:

    • Fill each cucumber boat with:

      1. Sushi rice (press lightly)

      2. Avocado mash

      3. 3–4 spicy shrimp

    • Drizzle with spicy mayo and sprinkle sesame seeds.

  6. Serve Immediately (to keep cucumbers crisp!).
