Spinach & Artichoke Wonton Cups

Ingredients:

  • 24 wonton wrappers

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup fresh spinach, finely chopped (or frozen, thawed & squeezed dry)

  • 1/2 cup marinated artichoke hearts, drained & chopped

  • 4 oz cream cheese, softened

  • 1/4 cup sour cream (or Greek yogurt)

  • 1/4 cup shredded mozzarella

  • 2 tbsp grated Parmesan

  • 1/2 tsp onion powder

  • 1/4 tsp red pepper flakes (optional)

  • Salt & black pepper to taste

Optional Garnish:

  • Extra Parmesan, chopped parsley, or a drizzle of hot honey

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.

  2. Press wonton wrappers into each cup, forming a star shape (edges will stick out). Lightly spray with oil (for crispiness).

  3. Bake for 5-7 minutes until lightly golden. Remove and let cool slightly.

  4. Make the filling:

    • Heat olive oil in a pan over medium heat. Sauté garlic until fragrant (~30 sec).

    • Add spinach and cook until wilted. Stir in artichokes, then remove from heat.

    • In a bowl, mix cream cheese, sour cream, mozzarella, Parmesan, onion powder, red pepper flakes, salt & pepper. Fold in the spinach-artichoke mixture.

  5. Fill & bake again:

    • Spoon filling into the pre-baked wonton cups.

    • Bake 8-10 minutes until bubbly and edges are golden.

  6. Garnish & serve warm!
