🥒 Spinach, Mushroom & Ricotta Stuffed Zucchini Boats (Low-Carb & Delicious!)

These savory zucchini boats are stuffed with a creamy ricotta, spinach, and mushroom filling—perfect for a light dinner, meal prep, or a keto-friendly side dish!

📝 Ingredients

For the Zucchini Boats:

  • 4 medium zucchinis, halved lengthwise

  • 1 tbsp olive oil

  • Salt & pepper to taste

For the Filling:

  • 1 tbsp olive oil

  • 8 oz mushrooms, diced

  • 2 cloves garlic, minced

  • 2 cups fresh spinach, chopped

  • 1 cup ricotta cheese

  • ½ cup shredded mozzarella (plus extra for topping)

  • ¼ cup grated Parmesan

  • 1 tsp Italian seasoning

  • Pinch of red pepper flakes (optional)

For Garnish:

  • Fresh basil or parsley

  • Extra Parmesan


👩🍳 Instructions

1️⃣ Prep the Zucchini

  1. Preheat oven to 375°F (190°C).

  2. Scoop out the centers of the zucchini halves to create “boats.” (Save the flesh for the filling!)

  3. Brush with olive oil, season with salt & pepper, and bake 10 mins (to soften slightly).

2️⃣ Make the Filling

  1. Heat olive oil in a skillet. Sauté mushrooms until golden (~5 mins).

  2. Add garlic and spinach, cooking until wilted (~2 mins).

  3. Stir in ricotta, mozzarella, Parmesan, Italian seasoning, and red pepper flakes.

3️⃣ Stuff & Bake

  1. Fill zucchini boats with the ricotta mixture.

  2. Top with extra mozzarella.

  3. Bake 15-20 mins until cheese is bubbly and golden.

4️⃣ Garnish & Serve

  • Sprinkle with fresh herbs and Parmesan.

  • Serve hot with a side salad or crusty bread.
