Spinach Stuffed Pastry Recipe

Ingredients:

  • 1 sheet puff pastry (thawed, if frozen)
  • 1 cup fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 egg (for egg wash)
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional: sesame seeds for topping

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare the Filling:

  • In a mixing bowl, combine the chopped spinach, ricotta cheese, feta cheese, grated Parmesan cheese, minced garlic, dried oregano, salt, and pepper. Mix well until combined.

3. Roll Out the Puff Pastry:

  • On a lightly floured surface, roll out the puff pastry sheet to smooth it out. Cut it into squares or rectangles (about 4×4 inches).

4. Fill the Pastry:

  • Place a generous spoonful of the spinach filling in the center of each pastry square. Be careful not to overfill.

5. Seal the Pastry:

  • Fold the pastry over to create a triangle or rectangle. Press the edges together to seal, and use a fork to crimp the edges for an extra seal and decorative touch.

6. Egg Wash:

  • In a small bowl, beat the egg and brush it over the tops of the pastries. This will give them a nice golden color while baking. If desired, sprinkle sesame seeds on top.

7. Bake:

  • Place the stuffed pastries on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.

8. Serve:

  • Allow to cool slightly before serving. Enjoy warm or at room temperature!
