Spring Salad with Cucumber and Napa Cabbage
A fresh, crunchy, and light salad inspired by Eastern European and Asian flavors—perfect for spring!
Ingredients:

1 English cucumber (or 2 Persian cucumbers), thinly sliced

2 cups Napa cabbage (Chinese cabbage), shredded

1/4 red onion, thinly sliced

1 small carrot, julienned

2 tbsp fresh dill, chopped

2 tbsp fresh parsley, chopped

1 tbsp white vinegar or rice vinegar

1 tbsp extra-virgin olive oil

1 tsp honey or sugar

Salt & black pepper to taste

Optional: 1/2 tsp toasted sesame seeds
Instructions:

In a large bowl, combine cucumber, Napa cabbage, red onion, carrot, dill, and parsley.

In a small bowl, whisk together vinegar, olive oil, honey, salt, and pepper.

Pour dressing over the salad and toss gently.

Chill for 15 minutes before serving. Garnish with sesame seeds (if using).
