St. Patrick’s Day Chocolate Covered Mint Patties

Ingredients:

  • 1/3 cup light corn syrup
  • 1/4 cup butter, softened
  • 1 1/2 tsp mint extract (adjust to taste)
  • Pinch of salt
  • Green food coloring (a few drops, as desired)
  • 4 cups powdered sugar, sifted
  • 12 oz chocolate candy coating (such as almond bark or melting chocolate)

Instructions:

  1. Prepare the Mint Filling:

    • In a mixing bowl, combine the light corn syrup, butter, mint extract, and a pinch of salt. Stir until the butter is fully incorporated and the mixture is smooth.
    • Add a few drops of green food coloring to get that festive St. Patrick’s Day color. You can adjust the color as needed.
    • Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. Keep mixing until the dough is smooth and thick. It should be firm enough to hold its shape but still soft enough to roll out.
  2. Shape the Mint Patties:

    • Roll the mint filling into small balls, about 1 inch in diameter, then flatten them slightly into patty shapes. You should end up with about 20-24 patties, depending on the size.
    • Place the patties on a parchment-lined baking sheet and refrigerate for about 30 minutes to firm them up.
  3. Melt the Chocolate Coating:

    • In a heatproof bowl, melt the chocolate candy coating according to the package instructions, either in the microwave or using a double boiler. Stir until completely smooth and melted.
  4. Dip the Patties in Chocolate:

    • Once the mint patties are firm, use a fork or a dipping tool to dip each patty into the melted chocolate, ensuring they are fully coated.
    • Gently tap the fork to remove excess chocolate and place the dipped patties back on the parchment-lined sheet.
  5. Let the Chocolate Set:

    • Allow the chocolate to set at room temperature or refrigerate the patties for about 30 minutes until the chocolate hardens completely.
  6. Serve:

    • Once set, your St. Patrick’s Day Chocolate Covered Mint Patties are ready to enjoy! Serve them as a festive treat for your celebration or package them as a gift.
