St. Patrick’s Day Corned Beef and Cabbage Sliders are the perfect bite-sized treat for your celebration! These sliders combine tender corned beef, tangy cabbage, and a creamy mustard mayo sauce all in one delicious sandwich. Here’s how to make them:

St. Patrick’s Day Corned Beef and Cabbage Sliders

Ingredients:

  • 12 slider buns
  • 1 pound corned beef, sliced thinly
  • 1 cup cabbage, shredded finely
  • 2 tablespoons Dijon mustard
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 6 slices Swiss cheese, cut into quarters

Instructions:

  1. Make the Cabbage Slaw:

    • In a bowl, combine the shredded cabbage with the Dijon mustard, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix until everything is evenly coated. Set aside to let the flavors meld.
  2. Assemble the Sliders:

    • Preheat your oven to 350°F (175°C).
    • Slice the slider buns in half and arrange the bottom halves on a baking sheet or large baking dish.
    • Layer the sliced corned beef evenly on the bottom halves of the buns.
    • Top the corned beef with a quarter slice of Swiss cheese on each slider.
  3. Add the Slaw:

    • Spoon the cabbage slaw generously over the cheese and corned beef on each slider.
  4. Top with the Buns:

    • Place the top halves of the slider buns on top of the assembled sliders.
  5. Bake:

    • Place the sliders in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and the buns are golden brown.
  6. Serve:

    • Remove from the oven and serve immediately while warm. You can garnish with extra mustard or pickles if you like!

Optional Add-Ins:

  • Pickled onions or sauerkraut for added flavor.
  • Horseradish sauce for a little extra kick.
