St. Patrick’s Day Irish Nachos are a fun and hearty twist on the classic nachos, using crispy potato slices instead of tortilla chips! Topped with cheddar cheese, turkey bacon, and sour cream, they make a perfect St. Patrick’s Day snack. Here’s the recipe:

St. Patrick’s Day Irish Nachos

Ingredients:

  • 3-4 large russet potatoes
  • Olive oil
  • Salt and pepper, to taste
  • 2 cups cheddar cheese, shredded (adjust as needed)
  • ½ cup turkey bacon, cooked and chopped
  • ½ cup sour cream or crema
  • ¼ cup chives or green onions, chopped

Instructions:

  1. Prepare the Potatoes:

    • Preheat your oven to 400°F (200°C).
    • Wash and peel the russet potatoes, then slice them into thin rounds (about 1/8-inch thick).
    • Place the potato slices on a large baking sheet and drizzle them with olive oil. Toss the potatoes to coat evenly and season with salt and pepper.
  2. Bake the Potatoes:

    • Spread the potatoes out in a single layer on the baking sheet. Bake for 20-25 minutes, flipping halfway through, until the potatoes are crispy and golden brown.
  3. Assemble the Irish Nachos:

    • Once the potatoes are crispy, remove them from the oven. Sprinkle the shredded cheddar cheese over the hot potatoes so it melts into the layers. Then, add the chopped turkey bacon on top of the cheese.
  4. Bake Again:

    • Return the sheet to the oven for an additional 5-7 minutes or until the cheese is fully melted and bubbly.
  5. Garnish and Serve:

    • After baking, remove the Irish nachos from the oven. Drizzle with sour cream (or crema) and sprinkle the chopped chives or green onions on top for a burst of freshness.
  6. Serve:

    • Serve immediately while the nachos are hot and cheesy. Enjoy your St. Patrick’s Day twist on nachos!

Optional Add-ins:

  • Jalapeños: For a spicy kick, add sliced jalapeños before baking.
  • Guacamole: A dollop of guacamole on the side would be a great addition.
  • Shredded lettuce: For a bit of crunch and freshness.
