2 ears corn, grilled & cut into halves

1 cup cherry tomatoes, roasted or fresh

1 ripe avocado, sliced

2 cups cooked quinoa (or rice/cauliflower rice)

2 cups baby spinach/mixed greens
For the Cilantro Cream Sauce:

½ cup sour cream (or Greek yogurt)

¼ cup fresh cilantro, chopped

1 lime, juiced

1 garlic clove, minced

1 tbsp olive oil

Salt & pepper, to taste

Instructions
1️⃣ Cook the Steak

Rub steak with olive oil, salt, and pepper.

Grill or pan-sear 3-4 mins per side (for medium-rare). Let rest 5 mins, then slice thinly.
2️⃣ Roast the Corn & Tomatoes

Brush corn with oil, grill or roast at 400°F (200°C) for 10-12 mins until charred.

Toss tomatoes with oil, salt, and roast 8-10 mins (if using fresh, skip roasting).
3️⃣ Make the Cilantro Cream Sauce

Blend sour cream, cilantro, lime juice, garlic, olive oil, salt, and pepper until smooth.
4️⃣ Assemble Bowls
