Steak Gorgonzola-Alfredo with Roasted Mushrooms and Spinach

Ingredients:

For the Steak:

  • 1 lb ribeye or sirloin steak
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Alfredo Sauce:

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled Gorgonzola cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Salt and pepper, to taste

For the Roasted Vegetables:

  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Pasta:

  • 12 oz fettuccine or your choice of pasta

Instructions:

  1. Cook the Pasta:
    • In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Roast the Mushrooms:
    • Preheat your oven to 400°F (200°C). On a baking sheet, toss the sliced mushrooms with olive oil, salt, and pepper. Roast for about 15-20 minutes until tender and slightly browned.
  3. Cook the Steak:
    • While the mushrooms are roasting, season the steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from the skillet, cover with foil, and let it rest for 5 minutes before slicing.
  4. Make the Alfredo Sauce:
    • In the same skillet used for the steak, add butter and minced garlic, cooking for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan and Gorgonzola cheese, mixing until melted and smooth. Season with salt and pepper to taste.
  5. Add Spinach:
    • Add the fresh spinach to the sauce and stir until wilted.
  6. Combine Everything:
    • In a large bowl, combine the cooked pasta with the Alfredo sauce. Add the roasted mushrooms and sliced steak on top.
  7. Serve:
    • Plate the pasta and garnish with extra Gorgonzola cheese and freshly cracked black pepper if desired.

Tips:

  • Add Herbs: Fresh herbs like parsley or basil can add a nice touch.
  • Make It Ahead: The sauce can be made ahead and reheated when ready to serve.
