Stir-Fried Shrimp and Broccoli Recipe

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 head broccoli, cut into florets
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil (or any neutral oil)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • Optional: 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening the sauce)
  • Optional garnish: sesame seeds or sliced green onions

Instructions

  1. Prepare the Shrimp:
    • Pat the shrimp dry with paper towels and season lightly with a pinch of black pepper.
  2. Blanch the Broccoli and Carrot:
    • Bring a pot of salted water to a boil. Add the broccoli florets and sliced carrot, and blanch for 1-2 minutes until slightly tender but still crisp. Drain and set aside.
  3. Stir-Fry the Shrimp:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.
  4. Cook the Vegetables:
    • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the blanched broccoli and carrot, and stir-fry for 2-3 minutes until heated through.
  5. Combine Everything:
    • Return the shrimp to the skillet. Add the soy sauce, oyster sauce, sesame oil, and remaining black pepper. Stir everything together until well coated and heated through. If you prefer a thicker sauce, add the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
  6. Serve:
    • Transfer the stir-fry to a serving dish. Garnish with sesame seeds or sliced green onions if desired. Serve hot with steamed rice or noodles.

Tips:

  • Shrimp Size: Use medium or large shrimp for the best texture. If using frozen shrimp, thaw them completely before cooking.
  • Vegetable Variations: Feel free to add other veggies like bell peppers, snap peas, or mushrooms.
  • Spice It Up: Add a pinch of red pepper flakes or a drizzle of chili oil for a spicy kick.
  • Oyster Sauce Substitute: If you don’t have oyster sauce, you can use hoisin sauce or a combination of soy sauce and a pinch of sugar.
