Stovetop Cake Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder (for chocolate cake) or leave out for vanilla
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 2 large eggs
  • Optional: chocolate chips or fruit for added flavor

Instructions

  1. Prepare the Pan:
    • Use a heavy-bottomed pot or deep skillet with a lid. Grease the bottom and sides with butter or oil. If you have a trivet or steaming rack, place it at the bottom of the pot.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, combine the flour, sugar, cocoa powder (if using), baking powder, and salt. Mix well.
  3. Add Wet Ingredients:
    • Add the milk, vegetable oil, vanilla extract, and eggs to the dry ingredients. Mix until just combined. Be careful not to overmix; a few lumps are okay. If desired, fold in chocolate chips or fruit.
  4. Pour Batter:
    • Pour the batter into the prepared pan.
  5. Cook on Stovetop:
    • Cover the pot with a lid and place it over low to medium-low heat. Cook for about 30-40 minutes. Avoid opening the lid too often, as this will let heat escape. You can check for doneness by inserting a toothpick into the center; it should come out clean.
  6. Cool and Serve:
    • Once done, remove the cake from the pot and let it cool for a few minutes. Slice and serve as is or with your favorite frosting or toppings.
