Strawberry Cheesecake Quesadillas

Servings: 4 quesadillas

Ingredients:

  • 4 medium flour tortillas (or large if you want more filling!)

  • 4 oz (½ cup) cream cheese, softened

  • 2 tbsp powdered sugar (plus extra for dusting)

  • ½ tsp vanilla extract

  • 1 cup fresh strawberries, sliced (plus extra for garnish)

  • 1 tbsp butter (for cooking)

  • Optional:

    • 2 tbsp graham cracker crumbs (for extra cheesecake flavor)

    • Chocolate chips or Nutella for a decadent twist

    • Whipped cream or vanilla ice cream for serving

Instructions:

  1. Make the cheesecake filling:

    • In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.

    • Fold in graham cracker crumbs (if using).

  2. Assemble the quesadillas:

    • Spread a thin layer of the cheesecake mixture on half of each tortilla.

    • Top with sliced strawberries (and chocolate chips, if desired).

    • Fold the tortilla in half.

  3. Cook until golden:

    • Heat a skillet or griddle over medium heat and melt butter.

    • Cook each quesadilla for 2-3 minutes per side, until golden and crispy.

  4. Serve warm:

    • Slice into wedges and dust with powdered sugar.

    • Top with extra strawberries, whipped cream, or ice cream if desired.

Tips:

  • Use low heat to prevent burning—the sugar in the filling can caramelize quickly.

  • For extra crunch, sprinkle the outside of the tortilla with cinnamon sugar before cooking.

  • Try with other fruits like bananas, blueberries, or raspberries!
