Instructions

Prep: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Make the cookie dough:

In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy.

In another bowl, whisk flour, baking soda, and salt, then gradually mix into wet ingredients until combined.

Beat cream cheese, powdered sugar, and vanilla until smooth.

Assemble the cookies:

Scoop 1 tbsp cookie dough, flatten slightly, and place 1 tsp cheesecake filling + ½ tsp strawberry jam in the center.

Top with another 1 tbsp dough, sealing edges to enclose the filling. Roll gently into a ball.

Bake: Place cookies 2″ apart on the sheet. Bake 12-14 minutes until edges are golden (centers will be soft).

Cool: Let rest on the sheet for 5 minutes, then transfer to a wire rack.
