Strawberry Cheesecake Stuffed Cookies 🍓🍪

These cookies are soft, buttery, and stuffed with a creamy cheesecake filling and sweet strawberry swirl—pure indulgence in every bite!


Ingredients

For the Cookies:

  • ½ cup (1 stick) unsalted butter, softened

  • ½ cup granulated sugar

  • ½ cup brown sugar (light or dark)

  • 1 large egg

  • 1 tsp vanilla extract

  • 1½ cups all-purpose flour

  • ½ tsp baking soda

  • ½ tsp salt

For the Cheesecake Filling:

  • 6 oz cream cheese, softened

  • ¼ cup powdered sugar

  • ¼ tsp vanilla extract

For the Strawberry Swirl:

  • ¼ cup strawberry jam or preserves (or homemade compote)

Optional:

  • White chocolate chips, extra jam for drizzling


Instructions

  1. Prep: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Make the cookie dough:

    • In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy.

    • Beat in egg and vanilla.

    • In another bowl, whisk flour, baking soda, and salt, then gradually mix into wet ingredients until combined.

  3. Make the cheesecake filling:

    • Beat cream cheese, powdered sugar, and vanilla until smooth.

  4. Assemble the cookies:

    • Scoop 1 tbsp cookie dough, flatten slightly, and place 1 tsp cheesecake filling + ½ tsp strawberry jam in the center.

    • Top with another 1 tbsp dough, sealing edges to enclose the filling. Roll gently into a ball.

  5. Bake: Place cookies 2″ apart on the sheet. Bake 12-14 minutes until edges are golden (centers will be soft).

  6. Cool: Let rest on the sheet for 5 minutes, then transfer to a wire rack.

✨ Don’t overbake—cookies will firm up as they cool.
✨ Swirl variation: Mix jam into cheesecake filling for a marbled effect.
