Strawberry Cream Cheese Loaf

Ingredients:

For the Loaf:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped (or use frozen strawberries, thawed and drained)
  • ½ cup sour cream or plain yogurt

For the Glaze (optional):

  • ½ cup powdered sugar
  • 2 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

2. Prepare the dry ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Cream together butter and cream cheese:

  • In a large bowl, use an electric mixer to cream together the softened butter and cream cheese until smooth and creamy.
  • Add the granulated sugar and continue to mix until fluffy (about 3-4 minutes).

4. Add the eggs and vanilla:

  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla extract.

5. Combine the wet and dry ingredients:

  • Gradually add the dry ingredients into the wet mixture, alternating with the sour cream or yogurt, beginning and ending with the dry ingredients. Mix until just combined.
  • Gently fold in the chopped strawberries, making sure they are evenly distributed throughout the batter.

6. Bake the loaf:

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • If the top of the loaf starts to brown too quickly, cover it loosely with foil and continue baking.

7. Cool the loaf:

  • Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

8. (Optional) Make the glaze:

  • While the loaf cools, mix the powdered sugar, milk, and vanilla extract together until smooth. Drizzle the glaze over the cooled loaf for added sweetness and shine.
