Strawberry Crunch Cookies 🍪🍓

These Strawberry Crunch Cookies are a delightful combination of sweet strawberry flavor and a crunchy, crumbly texture. With a rich strawberry taste and a fun, crunchy topping, these cookies are perfect for any occasion, whether you’re serving them at a party or enjoying them as a treat!


Ingredients:

For the Cookies:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 stick (½ cup) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup strawberry cake mix (for extra strawberry flavor)
  • 2 tablespoons milk (if needed to adjust dough consistency)

For the Crunch Topping:

  • ½ cup strawberry cake mix
  • ¼ cup crushed graham crackers (or crushed vanilla wafers)
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter, melted

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Cookie Dough:

    • In a medium bowl, whisk together the flour, baking soda, and salt.
    • In a separate large bowl, cream together the butter and sugar using an electric mixer until light and fluffy (about 2-3 minutes).
    • Add the egg and vanilla extract to the butter mixture and beat until combined.
    • Stir in the strawberry cake mix until fully combined.
    • Gradually add the dry ingredients (flour mixture) into the wet ingredients and mix until just combined. If the dough feels too dry, add 1-2 tablespoons of milk to help bring it together.
  3. Prepare the Crunch Topping:

    • In a small bowl, mix together the strawberry cake mix, crushed graham crackers, sugar, and melted butter until everything is combined and crumbly.
  4. Shape and Coat the Cookies:

    • Using a tablespoon or cookie scoop, scoop the dough into balls and roll them in the crunch topping mixture. Make sure each ball is well coated.
    • Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake:

    • Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden and the centers are set. The cookies will continue to firm up as they cool.
  6. Cool and Serve:

    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
