Strawberry Éclair Cake 🍓🍰

A no-bake, chilled dessert that layers graham crackers, creamy cheesecake pudding, fresh strawberries, and strawberry frosting for a decadent yet easy treat!


Ingredients

  • 1 box (3.4 oz) cheesecake-flavored instant pudding mix

  • 1½ cups whole milk (for richness)

  • 8 oz whipped topping (Cool Whip or homemade), thawed

  • 14.4 oz graham crackers (~1 box, or enough for 2 layers)

  • 1 lb fresh strawberries, washed, hulled, and sliced

  • 16 oz store-bought strawberry frosting (or homemade)


Instructions

  1. Make the Cheesecake Filling

    • In a bowl, whisk pudding mix and milk until thickened (~2 mins).

    • Fold in whipped topping until smooth.

  2. Layer the Cake

    • In a 9×13″ dish, spread a thin layer of frosting on the bottom (optional, to prevent sticking).

    • Add a single layer of graham crackers (break to fit).

    • Spread half the cheesecake filling over the crackers.

    • Arrange half the sliced strawberries on top.

    • Repeat layers: crackers → remaining filling → strawberries.

    • Top with a final layer of graham crackers.

  3. Frost & Chill

    • Microwave the strawberry frosting for 10-15 seconds to soften (easier to spread).

    • Frost the top layer evenly.

    • Cover and refrigerate at least 4 hours (best overnight) to soften crackers.

  4. Serve

    • Garnish with extra strawberries or whipped cream.

    • Slice and enjoy cold!
