📝 Ingredients

Salad Base:

  • 4 cups baby spinach
  • 2 cups arugula (or mixed greens)
  • 1 cup fresh strawberries, sliced
  • 1 ripe mango, diced
  • ½ cup crumbled feta cheese
  • ¼ cup pine nuts, toasted

Optional Add-ins:

  • ½ avocado, sliced
  • ¼ red onion, thinly sliced
  • Fresh mint or basil leaves

Dressing:

  • 3 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar (or lime juice)

2️⃣ Assemble the Salad

  1. In a large bowl, combine spinach, arugula, strawberries, mango, feta, and pine nuts.
  2. Add optional avocado or red onion if using.

3️⃣ Make the Dressing

  • Whisk olive oil, balsamic vinegar, honey, Dijon, salt, and pepper in a small bowl.

4️⃣ Serve

  • Drizzle dressing over salad just before serving. Toss gently and garnish with fresh herbs.
