Strawberry Shortcake Cheesecake 🍓🍰

Ingredients

Cookie Crumb Layer
  • 36 vanilla sandwich cookies, crushed (like Golden Oreos)

  • 3 oz box strawberry gelatin mix (dry powder)

  • 4 tbsp unsalted butter, melted

  • 5–6 drops red food color gel (optional, for vibrancy)

Strawberry Cake Layers
  • 16.5 oz box Strawberry Supreme cake mix

  • 3 large eggs, room temp

  • ½ cup (1 stick) unsalted butter, melted

  • 1 cup whole milk

  • 3 oz box strawberry gelatin mix (dry powder)

Cheesecake Layer
  • ¾ cup granulated sugar

  • ¼ cup cornstarch

  • 16 oz cream cheese, softened

  • ¼ cup heavy cream

  • 2 tsp vanilla extract

  • 3 large eggs, room temp

Frosting
  • 8 oz cream cheese, softened

  • ½ cup heavy cream

  • ½ cup (1 stick) unsalted butter, softened

  • 1 tsp vanilla extract

  • 2 cups powdered sugar


Instructions

1. Cookie Crumb Layer

  1. Preheat oven to 325°F (160°C). Grease a 9×13-inch baking pan or line with parchment.

  2. Mix crushed cookies, strawberry gelatin, melted butter, and food coloring until sandy.

  3. Press firmly into the pan bottom. Bake for 8–10 mins. Cool.

2. Strawberry Cake Layers

  1. In a bowl, whisk cake mix, eggs, melted butter, milk, and strawberry gelatin until smooth.

  2. Pour over the cooled crust. Bake 20–25 mins until set. Cool completely.

3. Cheesecake Layer

  1. Beat cream cheese, sugar, and cornstarch until smooth.

  2. Add heavy cream, vanilla, and eggs one at a time, mixing just until combined.

  3. Pour over the cooled strawberry cake layer. Bake 30–35 mins until edges are set but center jiggles slightly.

  4. Cool to room temp, then refrigerate 4+ hours.

4. Frosting

  1. Beat cream cheese, butter, and vanilla until fluffy.

  2. Gradually add powdered sugar, then heavy cream, until spreadable.

  3. Frost chilled cheesecake and top with fresh strawberries.
