Strawberry Shortcake Ice Cream Cake Recipe

Ingredients:

  • For the Crust:
    • 1 1/2 cups crushed shortbread cookies
    • 1/4 cup melted butter
  • For the Ice Cream Layers:
    • 2 pints strawberry ice cream, softened
    • 2 pints vanilla ice cream, softened
  • For the Strawberry Layer:
    • 2 cups fresh strawberries, hulled and sliced
    • 1/4 cup granulated sugar
  • For the Whipped Cream Topping:
    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
  • For Garnish:
    • Fresh strawberries
    • Crushed shortbread cookies

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the crushed shortbread cookies and melted butter. Mix until the crumbs are evenly coated.
    • Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Place in the freezer for 10 minutes to set.
  2. Make the Strawberry Layer:
    • In a medium bowl, combine the sliced strawberries and granulated sugar. Let sit for 10 minutes until the strawberries release their juices. Mash lightly with a fork to create a chunky strawberry mixture.
  3. Layer the Ice Cream:
    • Spread the softened strawberry ice cream evenly over the prepared crust. Place in the freezer for 20 minutes to firm up.
    • Spread the strawberry mixture over the strawberry ice cream layer. Place back in the freezer for 20 minutes.
    • Spread the softened vanilla ice cream evenly over the strawberry layer. Place in the freezer for at least 4 hours, or until fully set.
  4. Prepare the Whipped Cream Topping:
    • In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. Assemble the Cake:
    • Remove the ice cream cake from the freezer and release it from the springform pan.
    • Spread the whipped cream evenly over the top and sides of the cake.
  6. Garnish:
    • Decorate the top with fresh strawberries and sprinkle with crushed shortbread cookies.
  7. Serve:
    • Slice the cake with a warm knife for clean cuts and serve immediately. Enjoy!
