Strawberry Shortcake Poke Cake Recipe

Ingredients:

For the Cake:

  • 1 box (15.25 oz) white or yellow cake mix (plus ingredients listed on the box: eggs, oil, water)
  • 1 cup sweetened condensed milk
  • 1 cup strawberry puree (blend fresh or frozen strawberries until smooth)

For the Topping:

  • 2 cups fresh strawberries (sliced)
  • 2 cups whipped cream (or whipped topping like Cool Whip)
  • Optional garnish: additional strawberry slices or mint leaves

Instructions:

  1. Bake the Cake:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • Prepare the cake batter according to the package instructions. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool for 10-15 minutes.
  2. Poke the Cake:
    • Use the handle of a wooden spoon or a skewer to poke holes all over the cake, about 1 inch apart.
  3. Add the Fillings:
    • In a small bowl, mix the sweetened condensed milk and strawberry puree. Pour the mixture evenly over the cake, allowing it to seep into the holes.
    • Refrigerate the cake for at least 1 hour to let the flavors soak in.
  4. Top the Cake:
    • Spread the whipped cream evenly over the chilled cake.
    • Arrange the sliced strawberries on top. Add additional strawberry slices or mint leaves for garnish if desired.
  5. Serve:
    • Slice and serve chilled. Store any leftovers in the fridge.

Tips:

  • Homemade Whipped Cream: For a fresher taste, make your own whipped cream by beating 1 cup of heavy cream with 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form.
  • Strawberry Puree: If you prefer a smoother texture, strain the strawberry puree to remove seeds.
  • Variations: Use other fruits like raspberries, blueberries, or a mix for a different flavor.
  • Make Ahead: This cake can be made a day in advance and stored in the fridge until ready to serve.

This Strawberry Shortcake Poke Cake is a crowd-pleasing dessert that’s perfect for picnics, potlucks, or any special occasion. Let me know if you try it or need more dessert ideas! 😊🍓🍰
