Crunchy tostadas piled high with creamy Mexican street corn, shredded chicken, melted cheese, and a bright cilantro-lime drizzle—like an open-faced quesadilla meets elote!


📝 Ingredients

For the Tostadas:

  • 4 crispy tostada shells (or bake corn tortillas at 400°F until golden)

  • 2 cups shredded cooked chicken (rotisserie, grilled, or poached)

  • 1 cup shredded Monterey Jack or Oaxaca cheese

For the Street Corn Mix:

  • 1.5 cups corn kernels (fresh, canned, or roasted)

  • ¼ cup mayonnaise

  • ¼ cup cotija cheese, crumbled

  • 1 tbsp lime juice

  • ½ tsp chili powder

  • ½ tsp smoked paprika

  • ½ cup sour cream or Mexican crema

  • 2 tbsp chopped cilantro

  • 1 tbsp lime juice

  • 1 tsp honey or agave (optional, to balance tang)

  • Salt to taste

Optional Toppings:

  • Sliced avocado

  • Pickled red onions

  • Hot sauce

1. Prep the Street Corn Mix

  1. In a bowl, combine corn, mayo, cotija, lime juice, chili powder, smoked paprika, cilantro, garlic, salt, and pepper. Mix well.

2. Make the Cilantro Lime Cream

  • Whisk together sour cream, cilantro, lime juice, honey, and salt. Set aside.

3. Assemble & Melt

  1. Lay tostada shells on a baking sheet.

  2. Spread a layer of street corn mix on each.

  3. Top with shredded chicken, then sprinkle with Monterey Jack cheese.
