Stuffed Bell Peppers Recipe

Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice (white, brown, or quinoa)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • Fresh parsley or basil for garnish (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Prepare the Bell Peppers:

  • Cut the tops off the bell peppers and remove the seeds and membranes. If needed, slice a small portion off the bottom to help them stand upright. Arrange the peppers in a baking dish.

3. Cook the Filling:

  • In a large skillet over medium heat, cook the ground beef (or turkey) until browned. Drain excess fat.
  • Add the diced onion and garlic to the skillet and sauté until the onion is soft, about 5 minutes.
  • Stir in the cooked rice, diced tomatoes (with juices), Italian seasoning, salt, and pepper. Cook for another 5 minutes until heated through.

4. Stuff the Peppers:

  • Spoon the meat and rice mixture into each bell pepper, packing it in gently. Top each stuffed pepper with shredded cheese.

5. Bake:

  • Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly.

6. Serve:

  • Garnish with fresh parsley or basil if desired. Serve warm.
