Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 2/3 cup warm water
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley (optional)
  • 1 tablespoon melted butter (for brushing)

Instructions:

  1. Preparation:
    • In a large bowl, mix the flour, salt, sugar, and baking powder.
  2. Making the Dough:
    • Add the warm water and olive oil to the dry ingredients.
    • Mix until a soft dough forms.
    • Turn the dough onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.
    • Cover the dough with a clean towel and let it rest for 10 minutes.
  3. Preparing the Filling:
    • In a medium bowl, combine the shredded mozzarella, crumbled feta, and chopped parsley (if using).
  4. Forming the Flatbreads:
    • Divide the dough into 4 equal portions.
    • Roll each portion into a ball, then flatten it into a 6-inch circle.
    • Place 1/4 of the cheese mixture in the center of each circle.
    • Fold the edges of the dough over the filling to form a sealed pouch, then gently flatten it into a round flatbread.
  5. Cooking:
    • Heat a large skillet or griddle over medium heat.
    • Place the flatbreads in the skillet and cook for 3-4 minutes on each side, until golden brown and the cheese is melted.
  6. Finishing:
    • Brush the cooked flatbreads with melted butter.
    • Let them cool slightly before serving.
